Happy Sunday and we’re headed into Halloween week already! For some Halloween is just another day, but for me — it’s one of the most fang-tastic days of the year. I love candy, so that’s probably some of the reason I enjoy this holiday so much, however I can’t wait put on some sort of costume, even if I’m not having a party because it’s the only time of year I can dress up into something spooky. Going trick-or-treating with my granddaughter this year will be the highlight, but there’s so much fun to be had all week long beforehand.
The menu this week will try to have some Spooktacular flair, but it won’t be too over the top. I don’t like to eat unnaturally dyed green or purple things, but I do appreciate some recipes that have a Halloween vibe. Monday is a good day for soup and my Roasted Asparagus and Red Pepper Soup is super easy to prepare and it’s green. On Tuesday, we’re skipping tacos and going straight for my Pumpkin Risotto with Crispy Prosciutto. It’s warm and creamy with crunchy bits of Italian ham as croutons. Wednesday is Hump Day and a superb time for my super easy Instant Pot Chipotle Turkey Chili. This recipe would be great on Halloween night because it will stay warm in the pot to enjoy before and after trick or treating. Thursday night is Mama’s Meatballs night! This recipe is an oldie, but one of the best on my blog. I learned how to make meatballs from my bestie’s mom many years ago. Friday night is a great time for a bewitching cocktail hour and this Bloody Martini will surely put you in a ghoulish mood. Saturday’s are for baking something for a Halloween party or gathering you might be throwing and this Chocolate-Coconut Spider Web Pie shouldn’t be missed. Have a Boo-tiful week.
