I hope you are having a nice Memorial Day Weekend. In light of this past week, it’s been difficult to fully enjoy life without thinking about the children and teachers who lost their lives. We as a country need to do more to prevent this from happening again and again, and to project innocent children in schools who are there to learn and grow as human beings. I stay close to my family during difficult times, and I’m grateful I have one to enjoy. Today, we’re getting together for pizza night at our house because I’m lucky enough to have a wood-burning oven pizza oven in the kitchen. There’s nothing better than a blistered pizza hot out of the oven however, you don’t need a fancy oven to make great pizza — a hot oven and a sheet pan can make a great pie, use the broiler function to finish it off — for just the right amount of charred edges.
To kick off the week, since it’s Memorial Day — I thought that Pimento Cheeseburgers would work beautifully either prepared indoors on the stove top, or outside on the grill. Tuesday comes fast this week and a big pot of Slow Cooker Chicken Filling for tacos, burritos or enchiladas will satisfy those hungry people in your household. On Wednesday I thought we’d use up some of that leftover chicken filling and make a hardy Chicken Fajita Soup for dinner. Thursday makes a perfect night for pasta and my Sundried Tomato Penne with Shrimp and Sausage will put some smiles on many faces. TGIF and it’s time for a great cocktail — and a good Cherry Martini will surely suffice, especially because it’s cherry season. Saturday’s are for baking and my Mixed Berry Buckle is great for brunch or dessert. Have a nice short week and hug your family – call your state Senator.
Monday – Meaty tender burgers with a big dollop of zesty pimento cheese to ooze over the top.

Tuesday – Mexican flavored chicken filling is slightly spicy and perfect in any kind of tortilla or piled on top of greens.

Wednesday – Shredded or diced chicken, either from leftovers the previous night, or rotisserie from the store, makes a lovely fajita soup.

Thursday – Sweet sundried tomatoes balance out the tangy tomatoes and compliment both the shrimp and sausage in this pasta dish.
