Summer officially begins this week and to kick things off we are starting with a Sauteed Shrimp and Zucchini Quinoa Salad with Dilly Vinaigrette. Slow Cooker Asian Chicken and Coconut Rice makes life really simple on Thursday. It’s a low and slow recipe that you layer in a pot and dinner is done before the sun begins to set.
Friday is officially the start of summer and what better way to begin than with a Watermelon Mojito — cool, refreshing, and so tasty on a warm evening. Saturday’s are for baking a Cherry Apple Almond Crostata or an Italian rustic tart — as it’s also called. Fresh cherries are super ripe and now is the time to take full advantage of this luscious fruit. Have a tasty week — yay for summer!
