Happy Sunday and boy is it chilly outside! Nothing like a springtime cooldown right after a gorgeous week. The flowers were just starting to turn into a super bloom when we got this cold front, but the week ahead is going to get into the 80’s for Southern California, and I can’t wait! I’m going to start to uncover my grill and smoker, so that I can begin a couple of seasons of outdoor cooking.
This week I’m starting slowly out of the colder weather gates with a dish that’s seasonlly fresh and delicious — 10-Minute Springtime Pasta Primavera. It’s still comfort food, but with lighter ingredients that reflect spring. Tuesday is a good night for Mexican Tamale Pie because sometimes we should all change up taco night and this recipe tastes really authentic. I used masa harina to create the topping, which gives it a delicious tamale taste. Wednesday evening the weather begins to change and my Grilled Thai Plank Peanut Salmon is one of my favorite recipes. It’s easy to put together and using a plank, adds a smokiness that’s hard to beat. Thursday brings even more nice weather and my Grilled Flatbread with Truffle Cheese, Sweet Peppers and Salami is one of the most delicious things you can make outdoors. You can always buy storebought pizza dough if you don’t have time to prepare your own. After a busy week — a good cocktail like my Meyer Lemon Drop is in store. It’s super refreshing and the lovely citrus notes really taste like springtime. Saturday’s are for baking Macaroon Brownies — super fudgy, coconutty and lovely to slice and serve after a meal, or for lunches during the week. Have a good one.
