Happy Sunday, it’s hot and sunny, feeling like summertime again, and what better day to make some terrific food and get your grocery list complete for the week. I have winter squash on the brain and I hope you all are going to make yesterday’s Fall Egg in a Hole. It’s super fun, tasty and easy to make any day of the week. I love how Delicata squash doesn’t need a peel, you just seed it, and slice, then it’s ready for sauteeing, roasting or a quick broil in the oven.
This week I’m kicking it off with soup – Roasted Butternut Squash, Poblano and Rice Soup — it’s a family favorite and the leftovers store nicely in the freezer. Tuesday is taco time – Philly Cheese Steak Tacos – perfect for game night. Wednesday evening requires my Quick Turkey Meatball Pasta with Tomatoes and Spinach. It’s super fast, fresh and the meatballs are soft and tender – fabulous for the middle of the week. It’s Halibut Fish Sandwiches on Thursday – a simple meal that will still give you some summertime vibes. Friday night means cocktail time – a Bourbon Sour – cool, citrusy with warming notes. Saturday’s are for baking and my Rustic Pear Tart is loaded with fall fruit, and a crumbly top. Have a great week.
