Another warm summer week down and on Tuesday it’s already August. Why do summer’s go so fast? Right when you get your tan on it’s time to think about fall leaves and unpacking those sweaters. I’m savoring each and every day of summer including some summertime favorite recipes.
Before I jump into meal ideas, I wanted to let you know that I have started a pop-up bakery in the Santa Ynez Valley called, “Vineyard Girl Bakes.” I converted an old horse trailer into a bakery trailer that is on-the-go covering wineries and special events. Monday were kicking off the week with Grilled Curry Chicken Salad. It’s wonderful to use leftover grilled chicken from the weekend or grill some up fresh and make a big batch to enjoy for lunch during the week. Tuesday is taco time and let’s get this party started with Slow-Cooker Carnitas Street Tacos. The kitchen stays cool, while you turn up the fun. Wednesday night is a good time to chill with a lovely Salmon Quinoa Burger either piled high on a bun with Creamy Horseradish Spread or over mixed greens — both delish. On Thursday, we’re enjoying fresh corn season with Crispy Corn Cakes with Lime Crema. They’re super easy to make in a non-stick skillet and fun to share with friends. Friday night means TGIF and it’s cocktail time – Peach Bellini’s. Let’s pretend we’re in Venice, Italy at Harry’s without the crowd. Saturday is time for baking, and yes, it’s time to turn on the oven — just briefly for these a Mixed Berry Buckle. Sweet berry cake with a brown sugar crumb topping – what’s not to love?! What a spectacular week ahead.
