It’s the beginning of spring break for some people, so many of you are taking off on vacation or relaxing at home and exploring your own surroundings. Easter is in a few weeks and recipes for the holiday are popping up everywhere. I love the transition of seasons and right now, we are just at the brink of new beginnings – weather, food and fun.
For Monday, I’d love the start the week with my Ground Lamb and Green Bean Lettuce Wraps with Ethiopian Flavors. Lamb is in season and these easy wraps are a tasty way to kick off the week. Tuesday means tacos and these Breakfast Tacos are delightful for either breakfast, lunch or dinner. On Wednesday, we’re expecting more rain, so I thought my Tomato Beef and Greens Soup would hit the spot. Thursday night is a good evening for something simple, yet special and my Rotisserie Chicken Santa Fe Pasta is deliciously easy and made with a store-bought roasted chicken. TGIF and it’s cocktail time – a Classic Negroni will be warm and cozy on a chilly evening. Saturday’s are for baking and it’s spring and all — so my Coconut Cream Pie with Chocolate Crumb Crust should make you smile. Have a tasty week and do something outdoors — even if you are staying home.
