Wildcraft in Culver City has been open for just over a month now and I can’t express enough what great food they are creating. For starters, they make their dough with a sourdough starter which gives the crust slight sour flavor. Secondly, they use a 00 flour which is a milled for them in Northern California. This combination of a great starter and fresh flour make for an outstanding pie.
The menu includes starters, veggies, salads, paninos and a red section of pizza and a white section of pizza. The red and white sections refer to the sauce and/or toppings of the pizza. For starters, the Fried Green Olives with fennel sausage and parmesan are divine. They take a sicilian olives and form sausage around them and then coat it with bread crumbs and fry them. Next, they toss the olives with parmesan, sage and crunchy almonds. Wonderfully sinful!
As for salads — Butchers Chopped Salad was a nice combination of romaine, salami, provolone, garbanzos and gigante beans. A little heavier on the salami and cheese would of been nicely appreciated but overall, tasty.
As for the pizza…well, I can’t say enough. The dough was light and airy but chewy and crispy all at once. The “Cuatro Quesos” pie was four cheeses that were creamy and smoky and the Meatball Pie had chunks of meatball in a rich marinara sauce. Both pies fabulous!
Wildcraft is a great new addition to the Culver City restaurant scene. It is open at noon daily and with happy hour specials from 4-7 p.m. daily.
