Vegan Vinaigrette – Recipe!

Nutritional Yeast is deactivated yeast that comes in a powdered form, which many vegans use in cooking because of its nutty, cheesy taste.  It contains vitamins and mineral and is fortified with vitamin B12, which offers a nice nutritional profile, especially for those who don’t eat meat.  I like to use nutritional yeast in some of my recipes, not because I’m vegan, but because it tastes so darn good.

Salad dressing or vinaigrette is a simple preparation of vinegar and oil, however if you haven’t added nutritional yeast to the mix – you don’t know what you are missing.  The bright yellowish powder mimics the flavors of Parmesan cheese and offers a new refreshing flavor to any salad or vegetable.

I love to shake up this vinaigrette with a tablespoon of Nutritional Yeast to change up the otherwise, monotonous taste of everyday salad dressing. The flavor will surprise you, whether you are vegan or not, and you can find it at most grocery stores; including Trader Joe’s.

Ingredients

1/3 cup red wine vinegar

2/3 cup olive oil

1 tablespoon Nutritional Yeast

2 teaspoons Dijon mustard

pinch of salt & pepper

(Makes 1 cup)

To Prepare:

  1. Place all ingredients into a jar with fitted lid.
  2. Shake like crazy for 1 minute.
  3. Pour over your favorite salads, steamed veggies or use a dip.  Enjoy!
