Mushroom Brie Bites – Recipe!

Print Friendly, PDF & Email

As New Year’s Eve approaches, those of us that are planning on staying home to celebrate, might be scrambling for some delicious recipes to enjoy with a glass of champagne or festive cocktail.  These Mushroom Brie Bites are a snap to make, not to mention — buttery, earthy and crunchy — all in one or two bites.

Going out for New Year’s can be tricky sometimes, not always a good bang for your buck.  So, I recommend having a few friends over and creating your own fun right at home.  These mushroom brie bites have just a handful of ingredients and bake-up quickly for an appetizer to serve for friends and family.  I sauteed mushrooms with some shallots to start and allowed time for them to cool, before a quick assemble of puff pastry dough, a slice of brie, and a spoonful of mushrooms.  Pile them on a plate for passing or to set on a coffee table to watch the New Year’s celebration on television.

Ingredients

1/2 shallot, sliced

To Prepare:

  1. Preheat oven to 400 degrees.  Oil a mini-muffin pan, set aside.
  2. In a skillet over medium heat, drizzled with 2 teaspoons oil, add mushrooms and shallot.  Sauté for 5 minutes, or until soft and creamy, set aside to cool.
  3. Cut puff pastry into squares and place each square into muffin pan.  You may need to repeat to cook remaining bites, if only a 12-cup pan.  Fill with slice of brie and top with a few sauteed mushrooms.
  4. Bake in oven for 15 minutes, remove and let cool for 5 minutes before transferring to plate.  Sprinkle with parsley, if desired.  Enjoy!
