As New Year’s Eve approaches, those of us that are planning on staying home to celebrate, might be scrambling for some delicious recipes to enjoy with a glass of champagne or festive cocktail. These Mushroom Brie Bites are a snap to make, not to mention — buttery, earthy and crunchy — all in one or two bites.
Going out for New Year’s can be tricky sometimes, not always a good bang for your buck. So, I recommend having a few friends over and creating your own fun right at home. These mushroom brie bites have just a handful of ingredients and bake-up quickly for an appetizer to serve for friends and family. I sauteed mushrooms with some shallots to start and allowed time for them to cool, before a quick assemble of puff pastry dough, a slice of brie, and a spoonful of mushrooms. Pile them on a plate for passing or to set on a coffee table to watch the New Year’s celebration on television.
Ingredients
1 cup sliced mushrooms, any variety
1/2 shallot, sliced
1 sheet puff pastry, cut into 16 squares
4 ounces brie or mushroom brie, sliced into 2-inch pieces
oil for cooking
parsley for sprinkling, optional
(Serves 4-6)
To Prepare:
- Preheat oven to 400 degrees. Oil a mini-muffin pan, set aside.
- In a skillet over medium heat, drizzled with 2 teaspoons oil, add mushrooms and shallot. Sauté for 5 minutes, or until soft and creamy, set aside to cool.
- Cut puff pastry into squares and place each square into muffin pan. You may need to repeat to cook remaining bites, if only a 12-cup pan. Fill with slice of brie and top with a few sauteed mushrooms.
- Bake in oven for 15 minutes, remove and let cool for 5 minutes before transferring to plate. Sprinkle with parsley, if desired. Enjoy!
