My brother-in-law is in town to celebrate his 60th birthday and he just loves lemon, so I made him these lemon blondies as a pre-birthday dessert when he arrived. Luscious lemon blondies are a cross between a bar and a cake, but there is no crust or lemon custard poured over top, just a buttery batter with both lemon zest and lemon juice added for some citrus taste. The whole dessert is made with just a few ingredients and baked in one pan. A quick glaze is spread over top to create an even sweeter lemon infusion that is super delicious.
I sliced and served a few blondies to kick-off the weekend and saved the rest for each day to snack on while he was in town. I can’t say enough how easy these bars are to make and they taste so lemony good that I will definitely put them in my baking repertoire. They make a great dessert for birthday celebrations or for dinner parties when you want a lemon dessert in no time at all.
Ingredients
1 cup granulated sugar
8 tablespoon butter, softened
2 large eggs
zest of 1 lemon
2 tablespoons lemon juice
1 1/4 cups all purpose flour
1/2 teaspoon salt
Glaze
1 cup confectioner’s sugar
2 tablespoons lemon juice
(Makes 12 Squares)
To Prepare:
- Preheat oven to 350 Degrees. Spray and line a 9 x 9 inch square pan with parchment paper.
- In a large bowl, cream together butter and sugar for 3 minutes. Scrape down sides of bowl and add eggs one at a time.
- Add lemon zest and juice and mix until combined. It might look a little curdled.
- Add flour and salt and mix until just combined. Spoon into pan and bake for 22-24 minutes, just until center is firm. Do not over bake.
- Remove and cool. Whisk glaze and pour over top. Cut into squares. Enjoy!
