If you’re a procrastinator and many of us are, then you are probably scrambling around trying to figure out what to make for Easter dinner. Brunch seems to be an easier meal, especially with eggs involved however, for some of us it’s Easter dinner that we all want to enjoy this holiday.
Making a meal plan does not have to be hard and you can always buy a few salads from your local deli to add to the mix of dishes you prepare right in your kitchen. I recommend a protein of some sort, whether you enjoy lamb or beef, chicken or fish – it’s always nice to have something substantial to serve alongside vegetables, potatoes or rice.
The starters are easy to throw together – a cheese plate or perhaps a dip or two – anything will do. Serve them up with your favorite crackers or chips, or grill some rustic bread and rub it with fresh garlic and drizzle with some olive oil. To make the meal complete, fresh fruit or a pie is always nice at Eastertime, but if baking is not in the cards, pick one up at your local bakery, or convince your guests to bring one.
