Soup is always a nice thing, especially when the weather hasn’t quite turned the corner towards summer and you want something to eat that’s comforting without feeling too heavy. Broccoli is the queen of vegetables to me – I love the way it makes me feel and I can eat it prepared in almost anyway. I always seem to have a crown of broccoli in my fridge, which makes it nice when I want to make a quick side dish or soup.
If you haven’t gotten on board with the Instant Pot or electric pressure cooker, I don’t know what you are waiting for?? It is super easy to use and you can make soups like Chunky Broccoli Cheddar in 15 minutes. The fact that the high pressure chamber breaks apart a vegetable in minutes without loosing any vitamins is magical. You can make the entire soup in one pot, including the pureeing and it’s ready for hungry tummies in no time.
The ingredients are simple; broccoli, broth and cheese and it tastes like a thick puree of veggie heaven with a smattering of cheesy goodness. I like to serve it with some whole grain crackers or a crusty French roll, and a glass of Sauvignon Blanc with it, isn’t bad either.
1 small white onion, diced
1 crown broccoli, sliced – including stem
2 cups chicken or vegetable broth
1 1/2 cups cheddar cheese
salt & pepper
1. In your electric pressure cooker, add 2 teaspoons of oil and onion, press Saute’ and cook for 3 minutes, hit cancel. Add broccoli, broth, 1 1/2 teaspoons salt, 1/2 teaspoon black pepper and stir. Place lid on top and press Soup or Steam and adjust to 15 minutes.
2. Vent manually and add all but, 1/2 cup of cheese, and 1 cup of water. Stir to combine and puree using hand blender, or puree in batches in a standard blender, until slightly chunky. Ladle into bowls and top with a sprinkling of remaining cheese, Enjoy!
