Grilled Crown of Broccoli with Za’atar Oil – Recipe!

Broccoli just happens to be one of my all-time favorite vegetables.  There’s something about the way broccoli makes me feel after I eat it that keeps me craving it so often.  I love cooked broccoli in any form, but prefer it roasted in the oven.  During the summertime, I try and prepare as many meals as I can on the grill to keep the kitchen cool, and as it turns out, broccoli makes the perfect candidate.

Grilling broccoli is super-duper simple and it just requires a quick pop in the microwave to par-cook the crown before grilling.  After that, it’s a quick sear on a hot grill and you’re almost ready to enjoy.

As far as a topping, if you haven’t tried a spice mix called Za’atar, you don’t know what you are missing.  It’s a North African herb combination made with sesame seeds, sumac, dried thyme and a few other things that you can add to warm olive oil for a fragrant drizzle over the grilled broccoli.  You can find Zahtar at most grocery stores and definitely online.  It’s also great sprinkled over grilled fish or chicken, and any other grilled vegetables you may have added to the fun.

Ingredients

1 crown broccoli

1 tablespoon Za’atar

1/4 cup olive oil + more for cooking

pinch of salt

(Serves 2-4)

To Prepare:

  1. In a microwave safe bowl, add broccoli crown and 1/4 cup water.  Cover bowl with plastic wrap and microwave for 4 minutes.  Remove bowl and plastic wrap and drain water.  Drizzle broccoli with olive oil and sprinkle with salt.
  2. In small saucepan over low heat, add olive oil and Za’atar.  Warm oil and leave on simmer, while you grill broccoli.
  3. Preheat grill to 40o degrees.  After 15 minutes, place broccoli on grill and sear on all sides, about 8 minutes total.
  4. Place broccoli back in bowl and drizzle oil over top.  Serve warm or room temperature.  Enjoy!
