I’m sending warm wishes from Canada, so I didn’t want to leave any of you hanging without some recipes ideas for the week. I’m having a splendid time in a different summertime climate with great friends that have been dearly missed. There will be more details on our trip later this upcoming week. As for food, it’s almost Labor Day Weekend, so I thought we’d keep things pretty summery, even though some have already hunkered down into the school year. Thanks for cooking along with me. Enjoy!
Monday – This dish is simple to make and utilizes that over abundance of summertime zucchini. It’s a one pan wonder that only takes minutes to prepare.
Tuesday – It’s meatball night! This slightly creamy sauce heightened by bitter arugula, enhances the mild tasting meatballs. You can spoon them over pasta, polenta or a toasted Kaiser roll.
Wednesday – I couldn’t get through summer without an amazing hot dog recipe. These dogs remind me of the ones they sell on the streets of Los Angeles after a good concert.
Thursday – Okay, yes I did include a salmon recipe this week because I didn’t last week, and you know how much I love salmon. This one is tossed in a lemony pasta that is refreshingly light and out of this world.
Friday – TGIF! This one skillet wonder can be whipped up in no time and is one of my favorites on a Friday night, especially after a long week.
Saturday – Come on it’s Saturday and peaches are still ripe for the picking. This meal will certainly start the day off right, while enjoying those luscious peaches.
