Ingredients
- 1 1/4 pounds chicken thighs, bone-in with skin
- 1 yellow onion, sliced
- 12 ounce crimini mushrooms, sliced
- 1/4 cup all-purpose flour
- 1 pound red potatoes, quartered
- 2 1/2 cups chicken broth
- 4 sprigs fresh thyme or 1/2 teaspoon dried thyme leaves
- salt and pepper
- avocado oil for cooking
(Serves 4)
To Prepare:
- In a Dutch oven or large skillet, add 1 tablespoon avocado oil and place over medium heat. After two minutes add chicken thighs skin side down.
- Cook for 4 minutes, or until skin is deep golden brown. Sprinkle tops of thighs with 1/2 teaspoon salt and 1/4 teaspoon pepper. Continue to cook for 3 minutes.
- Remove chicken from pan and add onions and mushrooms, stir scraping bits from bottom of pan. Add flour and stir for 1 minute. Add potatoes, 1/2 teaspoon salt and pinch of pepper, stir.
- Pour broth over top and nestle chicken back into pan. Add thyme into sauce and reduce heat to simmer and cover pan with lid. Cook for 25 minutes, remove lid and thyme stems.
- Ladle into bowls and serve with additional thyme, if desired. Enjoy!
