Healthy Peanut Butter Cocoa Balls – Recipe!

Candies and sweets are what’s on the agenda with the Christmas holiday just ahead and there are times when preparing a healthful treat is in order.  I love candy, yes I know – sugar is suppose to be a no-no, but on occasion, I do indulge.  I am not necessarily a chocolate lover, I enjoy it, but usually mixed with other ingredients like nuts to give it a crunchy texture and sometimes healthy sweets, just seem like an oxymoron until now.

Peanut Butter Balls were a recipe I learned as a young adult.  The classic version is made with Rice Krispies and tons of powdered sugar, rolled and dunked into melted chocolate.  This new version is very different and packed with peanut butter, flaxseeds, dates, oats and rolled in cocoa powder.  Yeah, before you say, “no” – they’re actually pretty good.

These no-bake treats are easy to put together, just pulse them up in a food processor and roll them into little balls.  Give them a quick chill in the freezer before they take a light bath in dark cocoa powder.  These are pretty easy treats to make and they store nicely in a airtight container for several days and make great gifts too.

Ingredients

1/2 cup peanut butter

1/2 cup rolled oats

1/4 cup golden flaxseeds

5 dates, pitted and chopped

1/2 cup cocoa powder

(Makes 12 Balls)

To Prepare:

  1. Add all ingredients, except cocoa powder to a food processor.  Pulse mixture 10 times.
  2.  Rolls into balls, about 1 heaping tablespoon each.  Place on a sheet pan and freeze for 10 minutes.
  3. Add cocoa powder to a bowl and roll each ball in cocoa.  Place in a bowl to serve immediately or store in an airtight container.  Enjoy!
