Ingredients
- Crust
- 2 1/4 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 12 tablespoons cold butter, diced
- 2/3 cup ice water
- Filling
- 8 large Granny Smith Apples, peeled and sliced
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 2 teaspoons apple pie spice or 1 1/2 teaspoons cinnamon, 1/2 teaspoon ground ginger, pinch of nutmeg
- juice of 1/2 lemon
- 1 cup water
- Crumb Topping
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon cinnamon or pumpkin pie spice
- 8 tablespoons butter – cold, diced

To Prepare:
- For Crust – In a food processor or large bowl, combine flour, sugar and salt.
- Add cold butter and pulse until small coarse crumbs. Add ice water and pulse until dought begins to come together (add more water, if necessary).
- Cover dough with plastic wrap and refrigerate at least 30 minutes, up to overnight.
- Preheat oven to 360 degrees.
- For Filling – In a large Dutch oven, add sliced apples, sugar, cornstarch, pumpkin pie spice, juice of 1/2 lemon and water, stir.
- Cook over medium heat for about 8 minutes or until apples just begin to soften and sauce thickens. Remove from heat and cool.
- For Crumb Topping – In a separate bowl, combine flour, oats, sugar, brown sugar, and cinnamon, stir. Add butter and using fingertips, press mixture together to form large clumps.
- Roll dough out onto floured surface and place in pie pan. Trim edges and roll under inside of pan. Crimp edges (see video) all around perimeter.
- Add filling and top with crumb topping. Place on sheet pan and bake for 45-50 minutes or until edges are deep golden brown. Remove and let cool to room temperature.
- Slice and serve with ice cream or whipped cream. Enjoy!
