Broccoli salad has been a classic for years, with most recipes containing a heavy mayonnaise based dressing. I thought I would change it up using Greek yogurt and a hint of sesame from Tahini paste. Tahini paste is ground toasted sesame seeds, originating in the Middle East. The earthy flavor perks up any sauce or spread and you most often find it in hummus recipes.
The flavors in this Broccoli Salad with Tahini Yogurt Dressing are quite unique and I added a handful of golden raisins for a bit of sweetness and texture. This makes a great side salad with burgers or other grilled meats and it is delicious for lunch all on its own.
Ingredients
4 cup broccoli florets, washed & dried
2/3 cup golden raisins
2 tablespoon sesame seeds
Dressing
1 cup 2% Greek yogurt
1 tablespoon Tahini paste, found in most upscale grocery stores
1 tablespoon honey
1 teaspoon chili oil
pinch of salt & pepper
(Serves 4-6)
To Prepare:
1. In a large pot of boiling water, blanch the broccoli florets for 1 minute. Remove the broccoli immediately and plunge into ice water, to stop the cooking.
2. Drain the broccoli and reserve for later. In a medium bowl, add the yogurt, tahini, honey, chili oil, salt and pepper. Whisk until smooth.
3. Add the broccoli, sesame seeds and golden raisins to the dressing and toss to combine.
4. Place the mixture in the refrigerator for a least 1 hour before serving, so the flavors meld together. Spoon into a serving bowl and enjoy!
