Bar Nuts – Recipe!

Nuts are a necessity when you have a cocktail in hand.  Not the sticky overly sweet kind or the recycled stale peanuts you find on most bar counter tops, but nicely seasoned roasted nuts to compliment your beverage of choice.  We’re lucky nuts are so good for us because they are easily consumed if they are prepared just right.

Storing nuts is a cool dry place or refrigerator is recommended so they don’t go rancid, but I buy what I  use within a months time and go back for more when there gone, so I don’t run the risk of spoilage.  However, if you make this recipe you won’t have to worry – they’ll be gone in an instant.

Tossing good quality nuts in a simple spice mix and then popping them into the oven is all that’s required here.  The spices gently bake into the creamy nuts and create a tantalizing coating, just the perfect touch.  It’s hard for people to even recognize what’s going on in their mouth with each and every handful, just that they can’t stop enjoying them.  Before you know it the bowl will be gone and you may need to head back to the store for another nut bulk buying experience.

Ingredients

2 1/2 cup raw mixed nuts, almonds, pecans, hazelnuts or walnuts

2 tablespoons melted butter

2 tablespoons brown sugar

1 tablespoon kosher salt

2 teaspoons chili powder

2 teaspoons dried rosemary or herbs de provence

1/2 teaspoon cayenne pepper

(Makes 2 1/2 Cups)

To Prepare:

  1. Preheat oven to 375 degrees.  In a large bowl, add nuts and toss.
  2. In a small bowl add melted butter and all the dried seasonings, stir.  Pour over top of nuts and toss.
  3. Spread nuts onto a sheet pan and bake for 8-10 minutes or until deep golden brown.  Remove and cool on sheet pan until room temperature.
  4. Pour into a bowl and serve.  Enjoy!
