It’s been a gorgeous weekend here in Southern California with temps reaching in the 80’s once again. It felt more like a summer afternoon, instead of a few weeks closer to Thanksgiving. However, this week — it’s supposed to rain! I love a good rainy day or two to prepare some of my favorite comfort food meals and this week will be filled with them.
On Monday, I’m kicking it off with a classic — my Turkey Meatloaf with Spicy Tomato Glaze. I’ve been making this recipe since I had my personal chef business and my clients always enjoyed it. Tuesday is time for tacos, yet I think my Mexican Roasted Butternut Squash Soup sounds super enticing. It’s warm and comforting and super easy to prepare during the week. The leftovers are easy to reheat for lunch. Wednesday is rain day hopefully, and I’m craving a big square of Lasagne Bolognese. It’s so warm and comforting and will really put a smile on your family’s face. Instant Pot Tex-Mex Vegan Chili is what’s on the menu Thursday. It’s packed with hardy beans is a silky sauce that makes this a delicious meal. Friday night and it’s cocktail time – Cranberry Negroni will surely put you in the holiday spirit. Saturday’s are for baking and these Pecan Pie Bars with Chocolaty Crust are easy to make and a great treat to share at a party or give to friends. Have a tasty week.
