The end of our longer days bring mealtime in the evenings much sooner than some of us prefer, yet often are a time of closer gatherings at the table. Darkness requires something warm and comforting to feed our soul and fill us with hardier flavors that keep us satisfied all night long.
This week is all about simple meals — soup, one-pan dishes and braises, starting with Monday – Chicken Vegetables Soup. A classic pot of chicken soup packed with vegetables instead of noodles, so that we start the week off right. Tuesday means tacos and I’m ready for Carne Asada, Mushroom and Swiss Chard Tacos. A dose of beef layered with earthy mushrooms and bright chard all rolled up into a delightful toasty tortilla. On Wednesday, we’re making Braised Pork Shoulder with Tomatoes and Olives — a one pot meal that’s packed with umami taste. You can braise it on the stove top, in the oven or use an electric pressure cooker to speed up cooking time. Thursday evening is something simple like Sheet Pan Honey Mustard Salmon & Brussels Sprouts. You just gotta love a one pan meal that’s super delicious. Friday evening and it’s cocktail time and what better to go with drinks than Warm Brie with Honey Roasted Grapes. It’s so ooey-gooey good with crackers or a toasted baguette. Saturday’s are for baking and my No-Knead Dried Cranberry Loaf is a cinch to bake. I love to slice it up for breakfast toast in the mornings or enjoy a hunk for dipping into my favorite stew.
