Ingredients
Filling
- 1 pound fresh rhubarb stalks, sliced thinly
- 3 baskets fresh strawberries, washed and sliced
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon butter for dish
Topping
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 12 tablespoons butter, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup boiling water
(Serves 8-10)
To Prepare:
- Preheat oven to 350 degrees.
- In a large bowl, combine rhubarb, strawberries, sugar and cornstarch. Toss to combine.
- Butter a 13 x 9 casserole dish, add filling to dish.
- In a stand mixer, combine flour, sugar and baking powder on low speed.
- Add butter and mix on low until coarse crumbs, about 3 minutes
- Add vanilla and boiling water and mix until just combined, 30 seconds.
- Pour topping over fruit in pan and bake for 45-50 minutes or until golden brown.
- Remove and let cool to room temperature.
- Spoon into bowls and serve with ice cream. Enjoy!
