Filling

  • 1 pound fresh rhubarb stalks, sliced thinly
  • 3 baskets fresh strawberries, washed and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon butter for dish

Topping

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 12 tablespoons butter, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup boiling water

(Serves 8-10)

To Prepare:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine rhubarb, strawberries, sugar and cornstarch. Toss to combine.
  3. Butter a 13 x 9 casserole dish, add filling to dish.
  4. In a stand mixer, combine flour, sugar and baking powder on low speed.
  5. Add butter and mix on low until coarse crumbs, about 3 minutes
  6. Add vanilla and boiling water and mix until just combined, 30 seconds.
  7. Pour topping over fruit in pan and bake for 45-50 minutes or until golden brown.
  8. Remove and let cool to room temperature.
  9. Spoon into bowls and serve with ice cream. Enjoy!
