Ingredients

  • 1 pound chuck or sirloin steak, sliced thinly across the grain
  • 1 medium onion, sliced
  • 2 cloves garlic
  • 2 teaspoons freshly grated ginger
  • 1 ounce dried porcini mushrooms, roughly chopped
  • 2 1/2 cups beef broth
  • 2 tablespoons soy sauce or tamari
  • 1 heaping teaspoon chili paste
  • 9 ounces papparadelle noodles or wide rice noodles
  • 2 cups broccoli florets
  • 2 tablespoon cornstarch
  • 1/3 cup fresh cilantro, chopped
  • neutral oil for cooking, avocado or sunflower

To Prepare:

  1. Add 1 tablespoon oil to pan and place over medium-high heat. After 3 minutes, add beef.
  2. Stir beef and cook for 4 minutes. Add onions and stir. Cook for 3 minutes.
  3. Add garlic and ginger and cook for 1 minute. Add mushrooms and broth, stir. Add chili paste and stir (more if you like to hot).
  4. Add noodles and continue to cook for medium heat for 7 minutes. Add broccoli and cover pan, reduce heat to low.
  5. Cook for 2 minutes and remove lid. Whisk cornstarch with 4 tablespoons of cold water to create s slurry. Add over top noodles, stir sauce to thicken.
  6. Cook for 1 minute and remove pan from heat.
  7. Ladle into bowls and top with fresh cilantro. Enjoy!
