Ingredients

  • 12 ounce filet of salmon
  • 1 tablespoons white sesame seeds
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1 egg
  • 1/2 English cucumber, washed
  • 1/4 red onion, peeled
  • 1/3 cup fresh cilantro, roughly chopped
  • 1/3 cup seasoned rice wine vinegar
  • 1 teaspoon Calabrian chili paste or 1 Fresno chili minced
  • 1/8 teaspoon salt
  • 5 grinds of black pepper
  • 1/4 cup sesame oil
  • 1 tablespoon olive oil + more for cooking
  • hot steamed rice, optional

To Prepare:

  1. Slice salmon in half into equal portions, set aside.
  2. In a small bowl, combine sesame seeds, salt, smoked paprika and onion powder.
  3. Whisk egg in separate bowl.  Dip each filet in bowl and place on plate.  Sprinkle with sesame seed mixture.
  4. In a large salad bowl, add rice wine vinegar, chili paste or chili, 1/8 teaspoon salt and grinds of black pepper.  Add sesame oil and olive oil, whisk.
  5. Add cucumbers, onions and fresh cilantro to bowl on top of dressing.  Toss to coat and set aside, while you cook salmon.
  6. Add 1 tablespoon olive oil to a non-stick skillet and place over medium heat. After 2 minutes, add salmon sesame seed side down in pan.  Cook for 3-4 minutes, or until golden brown.
  7. Flip and cook an additional 5-7 minutes, depending upon the thickness of salmon.
  8. Place salmon over hot rice and top with chili cucumber salad.  Drizzle some dressing over top of salmon. Enjoy!
