Ingredients

  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound crimini mushrooms, sliced
  • 2 teaspoons salt
  • 2 teaspoons dried oregano
  • 2 teaspoons onion powder
  • 1/2 teaspoon red pepper flakes
  • 1 pound ground pork
  • 28 can whole tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup red wine
  • 1 pound orechiette pasta, or other variety, cooked
  • parmesan cheese for dusting
  • olive oil for cooking

To Prepare:

  1.  In a large Dutch oven, add 2 tablespoon olive oil and place over medium-high heat.
  2. Add onion and saute for 3 minutes, then add garlic, stir.
  3. Add mushrooms, salt, oregano, onion powder and red pepper flakes, stir. Continue to cook for 4 minutes.
  4. Add tomatoes and tomato paste, stir while breaking apart tomatoes with a spoon.
  5. Add red wine and stir. Reduce heat and cover. Simmer for 35-40 minutes.
  6. Remove lid and stir. Ladle over cooked pasta and dust with parmesan cheese. Enjoy!
