Ingredients
Crust and Topping
1 cup all-purpose flour
3/4 cup rolled oats
1/2 cup light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
8 tablespoons cold butter, diced
Filling
3 cups fresh blueberries
1/4 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon lemon zest
(Serves 8-12)
To Prepare:
- Preheat oven to 350 degrees. Butter 9 x 9 inch pan and line with parchment hanging over on opposite sides of pan.
- In a sauce pan, add 2 cups blueberries, sugar, cornstarch and lemon zest. Place pan over medium heat and cook for 8 minutes, stirring occasionally.
- Turn off heat and add remaining cup of blueberries, stir. Set aside.
- In a stand mixer or large bowl, combine flour, oats, brown sugar, cinnamon and salt.
- Add cold diced butter and mix until coarse crumbs — do not over mix.
- Add half of crumb mixture to pan and press into bottom firmly. Bake for 10 minutes.
- Add blueberry mixture over top of crust and sprinkle with remaining crumbs. Bake for 30-35 minutes or until edges are lightly bubbling.
- Cool to room temperature and slice. Enjoy!
