A Week At A Time – Meal Ideas bring cozy fall flavors to your table with easy, seasonal recipes that make weeknight cooking delicious and stress-free. Plan ahead with comforting dishes featuring autumn ingredients like roasted squash, fresh or canned pumpkin, and warm spices.
This week is going to start to cool off a bit after a heat spike in Southern California over the last week. It felt much more like summer during the last few days, however sweater weather is on the horizon, and I can’t wait to get some fall cooking done in my kitchen.
Monday seems like a good day to prepare a Baked Pumpkin Cranberry Oatmeal – a dish that you can make and enjoy for a few mornings ahead, and have something cozy to start off the day. The leftovers heat easily in a few seconds in the microwave, which will bring a fall aroma to your kitchen. Tuesday is usually taco night, but I’m in the mood for Taco Soup – same flavors, but served warm in a bowl with crispy Frito’s over top.
Hump Day means you’re halfway through the week and nothing like a meal that’s ready when you are after a long days’ work – Slow Cooker Italian Brisket with Sweet and Spicy Peppers. A dinner that will truly feel like a big hug. On Thursday, it’s vegetarian night with my Caramelized Shallot and Butternut Squash Rice. You can add cooked chicken at the end of cooking if you’re not up to go purely veg.
Easy Sweet Potato Fries are on the menu for Friday and these babies don’t have any meat as well….but trust me – you won’t miss it. Serve them up with a crisp Chardonnay or glass of bubbles. Saturday’s are for baking, yet my Instant Pot Biscoff Cheesecake is really not baking, but steaming in a warm comfy chamber that’s conducive in creating a beautiful creamy dessert like this one. Have a gorgeous fall week ahead.
