A Week At A Time – Meal Ideas!

It’s been a week, to say the least.  I’ve had server problems on and off for days, but I believe it’s finally fixed.  So, let’s focus on food and talk about this week’s meals.  The weather is going to be extremely warm here in Southern California, and school is finally out, so I plan on keeping it pretty cool in the kitchen with some no-cook options that I think you’ll love, combined with some simple recipes that makes mealtime pretty darn tasty.

To kick off the week, I went with my Italian chopped salad that’s loaded with hardy greens, salami and chunks of cheese.  A bowl of fun that fills you up, while still keeping it on the lighter side.  Tuesday is salmon night, you know I couldn’t resist, but this time it’s paired with peanut noodles, a dish that’s truly delightful.  Wednesday and Thursday are no-cook nights with a creamy chicken wrap and a cheese and meat board that’s a real crowd pleaser.  You can toss them both together with store-bought ingredients, for quick and pleasurable dinner fun.  Friday night is grilled wings with Korean flavors, something that’s so scrumptious, you just shouldn’t miss, and Saturday, I ended the week with one of my favorite meals – breakfast quesadillas.

Stay cool, stay hydrated and keep on cooking on the cooler side.  Enjoy!

Monday – A zesty chopped salad is what I’m craving tonight.  A big bowl of mixed greens with chopped salami and cheese makes this salad a complete.

Tuesday – A stove top meal is exactly the right thing to make when it’s hot outside and this Asian salmon with peanut noodles has the perfect balance of flavors to satisfy the palate.

Wednesday – Keeping it ultra cool tonight with the chicken wraps.  A rotisserie chicken could be the best summertime solution to keeping your kitchen cool.

Thursday – It’s board night!  Not board game night (although it could be), but cheese and charcuterie night.  It’s a simple way to enjoy a quick and cool meal in minutes.

Friday – Hot wings on the grill is one of the tastiest meals you can make during the summertime.  The sauce is superbly spiced to make you keep comin’ back for more.
