Happy Sunday and I hope you had a good weekend. Fall is feeling wonderful these days with so many ingredients popping up at farmer’s markets and local grocery stores. I love the flavors of the season and would like to highlight them this week.
Monday, brings a recipe that has both summer and fall flavors like in this Cheddar, Tomato and Squash Rice Bake. It’s a simple one-pan meal that tastes so lovely after a long day. Tuesday is taco night however, an Instant Pot Mexican Inspired Pork Stew sounds very appealing and it’s a quick-fix at dinnertime.
Hump Day is always a good night for pasta and my Buffalo Chicken and Cauliflower Penne is a hit on any night of the week. It’s a little bit spicy, but not too hot – just nice enough to warm you up and make you feel so good. On Thursday, the flavors of these Asian Pork Potstickers will really be delicious. They may sound a little tedious to prepare, but they are simple to put together and make a fun night of food – give them a try.
TGIF and Turkey and Mushroom Lettuce Wraps are a cinch to throw together and make life pretty tasty. They don’t require many ingredients, mostly things from the pantry and they are loaded with tasty flavors. Saturday’s are for baking this Nutty Polenta Cake – it’s rich and fragrant – something I adore with a good cup of coffee in the morning, or after a delightful meal. Have a delicious week ahead.
