Ingredients
- 2-4 bone-in pork chops, 5-8 ounces each
- 2 teaspoons salt + more for corn mixture
- 2 teaspoons brown sugar
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper + more for corn mixture
- 2 stalks of corn, husked and sliced off of cob, or 2 cups defrosted corn
- 1 small yellow onion, diced
- 1/4 teaspoon red pepper flakes
- 1 medium zucchini, cut into half-moon pieces
- 1/4 cup heavy cream
- 6 sprigs fresh dill (roughly chopped) or 1 teaspoon dried dill
- Avocado oil for cooking
(Serves 2-4)
To Prepare:
- Preheat oven to 450 degrees.
- In a small bowl, combined salt, brown sugar, cumin, paprika and black pepper, stir.
- Rub each pork chop with dry rub on both sides.
- Add 1 tablespoon avocado oil to iron skillet and place over medium-high heat. After two minutes, add pork chops. Sear on first side for 4 minutes.
- Flip chops over and continue to cook for 3 minutes. Place skillet in oven to cook chops for 5-8 minutes, depending upon thickness, about 138 degrees.
- Remove chops from skillet and place on a plate. Cover with foil to rest, while you prepare relish.
- In same skillet, add corn and onions and place over medium heat. Stir to cook for 3 minutes. Add 1 teaspoon salt and red pepper flakes, stir.
- Add zucchini and stir. Cook for 2 minutes and add cream. Stir until combined.
- Sprinkle top of corn with chopped dill, stir. Add chops on top of corn mixture. Remove from heat.
- Place remaining dill sprigs on top. Enjoy!
