Ingredients
- 2 pound rotisserie chicken
- 1 cup Greek-style yogurt
- 1/4 cup mayonnaise + more for bread
- 1 heaping teaspoon Dijon mustard
- 1 teaspoon celery seed
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3 stalks celery, sliced
- 1 large apple, diced (any variety)
- 3 sprigs fresh tarragon, leaves removed and chopped
- 12 dinner rolls
- 2 cups baby arugula
(Serves 6)
To Prepare:
- Shred rotisserie chicken, removing skin and bones and place in a bowl.
- In a separate bowl, combine yogurt, 1/4 cup mayonnaise, Dijon, celery seed, onion powder, salt and pepper, whisk until smooth.
- Add celery, apples and tarragon to chicken mixture and spoon over yogurt dressing, stir to combine.
- Slice rolls horizontally across and flip top off (see video). Spread with 1/4 cup mayonaise on one side on bread.
- Top one side of rolls with chicken salad and sprinkle with arugula. Place lid of rolls back on top and slice individually.
- Serve and enjoy or wrap and chill for up to 3 hours before serving. Enjoy!
