Happy Sunday. I woke up feeling a little under the weather today, so this post is going to be short and sweet — recipes that will make you feel just a little better and get you back on your feet.
Soup always makes me feel better and on Monday, my Ginger Chicken Noodle Soup will sooth even the worst of throats and make you feel a whole lot better. Tuesday is usually taco night, but I’m craving some heart healthy beans and these Instant Pot Spicy Tomato Adzuki Beans will open up the airways with a bit of heat, and satisfy those Mexican food cravings. Sometimes when I’m not feeling my best a good salad is what I need to feel like myself again and on Wednesday, a Shaved Brussels Sprout Salad with Apples, Dried Cranberries and Pecorino can really be a game changer. It’s loaded with crunchy texture and lovely ingredients — things that will surely boost your immune system. Thursday evening is Instant Pot Berbere Chicken and Sweet Potato Stew with Ethiopian roots and warming spices that are out of this world. You can find Berbere spice blend online or create your own with some simple spices from your pantry. Friday night is a good evening for a quick and easy appetizer, like these Parmesan Smashed Potatoes. You an serve them with a burger, side salad, or just enjoy them all by themselves.
