Ingredients
- 2 medium globe eggplants, cut in half
- 1 garlic clove
- 1/2 cup tahini paste
- 1 lemon
- 2 teaspoons salt
- 1/4 teaspoon red pepper flakes
- olive oil
- 1 tablespoons fresh parsley, roughly chopped
- toasted rustic bread for serving
(Serves 6)
- Preheat oven to 425 degrees. Place sliced eggplant, cut side down on an oiled sheet pan and drizzle top with olive oil.
- Roast for 40-50 minutes, or until a knife can easily pierce into eggplant. Remove and let cool.
- In a food processor, add garlic clove. Pulse until chopped finely.
- Scoop eggplants pulp into food processor along with garlic. Add tahini paste, juice of lemon, salt and red pepper flakes.
- Puree until smooth, about 2 minutes. Spoon into a serving bowl.
- Top with fresh parsley and serve with toasted rustic bread.
