Ingredients
- 2 teaspoons smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 6 slices thick-cut bacon
- 1/3 pound fresh chorizo
- 1/2 red bell pepper, diced
- 1 cup fresh or frozen corn, defrosted
- 15 ounces black beans, drained
- 15 ounces crushed tomatoes
- 3 scallions, divided
- 8 ounces cream cheese, room temperature
- 8 ounces jack or white cheddar cheese, shredded
- Tortilla Chips for serving
(Serves 8)
To Prepare:
- Preheat oven to 400 degrees.
- Mix paprika, chili powder, cumin and salt together in a small bowl, set aside.
- Crisp up bacon in an iron skillet, remove and cool. Crumble into large pieces, set aside.
- To same pan, add chorizo, bell pepper and half of scallions and place over medium heat.
- Cook for 4 minutes and add corn, black beans, and tomatoes, stir to combine. Add half of dry seasoning mixture, stir.
- Cook for 2 minutes and add cream cheese, stir until creamy. Add remaining dry seasoning and half of bacon, stir.
- Top with 3/4 of shredded cheese and bake in a hot oven for 10- 12 minutes.
- Remove and top with remaining cheese, bacon and scallions. Serve with tortilla chips. Enjoy!
