This week has been another busy one and I hope most of you are now experts making my Instant Pot Shrimp Risotto Recipe after receiving it about twenty+ times this week. Needless to say, there are still some bugs I’m working through and hopefully this won’t happen again, but I appreciate you all hanging in there with me. Fall is in the air and it sure feels good – warm days and cool evenings lend themselves to some pretty good cooking.
For Monday, let’s start the week off right with a proper Fall Chicken Salad – a dish you prep and make for lunches, or dinners to enjoy a couple days of the week. I love the simplicity of this recipe and the apples sure make it taste like fall – crispy and sweet – the perfect addition to a creamy chicken salad. Tuesday’s are usually all about tacos and these Seared Bluefin Tuna Tacos with Sriracha Crema are super delish. Searing tuna in a hot pan is a quick endeavor – and if you’re not a fan of rare tuna – cook it a couple minutes more for a firmer texture. I like it just the way it’s written in the recipe because I want to enjoy that fresh tuna flavor in every bite.
Wednesday’s come quickly and after a long day there is nothing like a big bowl of White Bean Turkey Rosemary Chili. The ground turkey keeps things refreshing and I think it pairs so nicely with white beans. If you want a bit more heat, add a dash of hot sauce over top before serving. On Thursday evening, a plate of Roasted Butternut Squash Spaghetti with Crispy Sage screams fall and will get you in the mood for the season. This is a great dish to serve on Halloween Night before all the globlins head out to trick-or-treat.
The week ends on a satisfying note with a smooth Maple Bourbon Smash. A touch of good bourbon always seems to hit the spot this time of the year and a splash of maple syrup softens this cocktail and creates one super drink. Saturday’s are for baking Pumpkin Chocolate Chip Brownies – a treat the little ones will love because of the little bits of chocolate flecked throughout that creamy pumpkin. Have a fun fall week ahead.
