It’s been a few months since I’ve posted A Week at a Time – Meal Ideas. If you hadn’t noticed (I’d be shocked), I was having some technical difficulties throughout the summer while I was having my blog upgraded internally. Thanks for hanging in there with me through that process and I hope all of you have had a marvelous summer. Tomorrow is the first day of fall, which happens to be my favorite time of year to bake and catch up on some slow-cooking recipes that I don’t tend to make during the hotter months of the year.
Dare I say pumpkin yet? I do love the flavors of fall and pumpkin tends to be a big ingredients, whether fresh or canned – it seems to fit-in for so many reasons. Savory dishes sweeten slightly with a scoop of pumpkin puree like in this Pumpkin Risotto with Crispy Prosciutto Recipe. This already comfort food type dish becomes fall-like when adding pumpkin. Pumpkin Pecan Salad is another favorite this time of year, using freshly sliced pumpkin or squash that has been roasted and place it over hardier greens with toasted pecans. Something I truly adore.
Moving on into some other tasty fall ingredients are apples. My Make-Ahead Apple Pie comes to mind, yet there are so many other sweet and savory options with this fruit. Slow Roasted Pork Brisket with Apples and Onions is always a hit at my house. The apples serve as the sauce with sliced pork and balance out the already appetizing meaty taste. Apples are also super delicious in salad and my Shaved Brussels Sprout Salad with Apples, Dried Cranberries and Pecorino has a natural salty and sweet combination that can’t be beat. Apples tend to heighten the bitter Brussels Sprouts and create a bowl of flavors that brings us into a different season for sure.
Broccoli is a vegetable I can’t live without and it feels like the fall and winter months are better times of the year to enjoy recipes like Sheet Pan Chili Maple Salmon with Broccoli. It’s a quick and easy weeknight meal that will really please the entire family. The broccoli is served as a side dish, but cooks along with the salmon at the same time – making it super easy for clean up. This Goat Cheese Broccoli Rice Skillet is always a nice dish to serve for a vegetarian meal. The grains of rice drinks up the flavors of both the cheese and vegetable making it a flavorful experience. You can always serve it with some sauteed shrimp on top, if you’re requiring some additional protein.
Pears are another fruit that starts popping up quickly during the fall and this Rustic Pear Frangipane Tart is a real showstopper. It looks more complicated that it is to make and the almond/pear flavors are tasty together. Pears are also convenient for morning baking and Pear Cardamom Muffins are fragrant beyond belief, not to mention they will make your kitchen smell like the season.
