Ingredients

  • 2-4 bone-in pork chops
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 yellow onion, diced
  • 16 ounces sliced mushrooms, crimini, button or shiitake
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 cup brandy
  • 1/4 cup heavy cream
  • 2 tablespoons fresh chives, minced
  • salt & pepper
  • oil for cooking

To Prepare:

  1. Preheat oven to 400 degrees.
  2. Remove chops from packaging and pat dry with paper towels. In a small bowl, combine brown sugar, cumin, onion powder, salt, and pepper.
  3. Rub chops on both sides with seasoning.
  4. In a large oven-safe skillet, add 1 tablespoon oil and place over medium-high heat.
  5. Add chops and sear on first side for 4-5 minutes, or until deep golden brown, flip and place in oven to finish cooking for 7-10 minutes (temperature reaches 138 degrees).
  6. Remove chops from skillet and place on plate, cover with foil.
  7. Add onions and mushrooms to skillet, stirring and scraping up bits from bottom of pan. Cook for 4 minutes.
  8. Add butter and garlic, continue to cook for 2 minutes. Add brandy and stir. Cook for 2 minutes and add cream, stir.
  9. Season with salt and pepper to taste.
  10. Place chops on plates and top with mushroom sauce and chives. Enjoy!
