Ingredients
- Filling
- 8 apples, peeled and diced – Honeycrisp, Granny Smith or Gala
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon cinnamon
- 1 cup water
- Shortbread Crust
- 16 tablespoons butter, melted
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- Streusel Topping
- 1 cup rolled oats
- 2/3 cup light brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup all-purpose flour
- 8 tablespoon butter, cold and diced
(12-16 Bars)
To Prepare:
- Preheat oven to 350 degrees. Line a 13 x 9 inch pan with parchment paper, set aside.
- In a large saucepan or Dutch oven, add all filling ingredients and cook over medium heat for 8 minutes.
- Remove apples from heat and set aside.
- In a stand mixer or large bowl, combine melted butter, sugar, vanilla and flour, stir on low speed until dough just comes together, about 1 minute.
- Dump dough into pan, press into bottom to form base.
- Bake in oven for 12 minutes, remove and cool for 5 minutes.
- Create streusel topping by adding all ingredients to a bowl and press into clumps with fingertips.
- Pour apples over par-baked crust and top with streusel. Bake for 35-40 mintues or until golden brown.
- Remove and cool to rooom temperature before slicing. Enjoy!
