Ingredients

  • Filling
  • 8 apples, peeled and diced – Honeycrisp, Granny Smith or Gala
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1  tablespoon cinnamon
  • 1 cup water
  • Shortbread Crust
  • 16 tablespoons butter, melted
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • Streusel Topping
  • 1 cup rolled oats
  • 2/3 cup light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup all-purpose flour
  • 8 tablespoon butter, cold and diced

To Prepare:

  1. Preheat oven to 350 degrees. Line a 13 x 9 inch pan with parchment paper, set aside.
  2. In a large saucepan or Dutch oven, add all filling ingredients and cook over medium heat for 8 minutes.
  3. Remove apples from heat and set aside.
  4. In a stand mixer or large bowl, combine melted butter, sugar, vanilla and flour, stir on low speed until dough just comes together, about 1 minute.
  5.  Dump dough into pan, press into bottom to form base.
  6. Bake in oven for 12 minutes, remove and cool for 5 minutes.
  7. Create streusel topping by adding all ingredients to a bowl and press into clumps with fingertips.
  8. Pour apples over par-baked crust and top with streusel. Bake for 35-40 mintues or until golden brown.
  9. Remove and cool to rooom temperature before slicing. Enjoy!

You can store these Apple Pie Streusel Bars in the refrigerator for up to three days.
