Ingredients

  • 1/2 pound ground fresh chorizo, casings removed
  • 1/2 cup cherry tomatoes, sliced in half
  • 4 large eggs
  • 2 tablespoons heavy cream
  • 2 tablespoon sour cream
  • 2 tablespoons salsa
  • 2 tablespoon chopped cilantro
  • salt and pepper
  • warm corn tortillas for serving

To Prepare:

  1. In a a large non-stick skillet, add chorizo over medium heat.
  2. Cook for 3 minutes, while stirring. Add tomatoes and continue to cook for 2 minutes.
  3. In a bowl, add eggs and heavy cream, whisk.
  4. Add eggs to skillet and stir gently, folding into the center as you stir. Sprinkle with salt and pepper.
  5. After 2 minutes, turn off heat.  Top with sour cream, salsa and cilantro.
  6. Serve with tortillas. Enjoy!

Feel free to double the recipe for larger families and brunch friends. Just use a 12-inch non-stick skillet.
