One-pan pasta is a super simple way to get dinner on the table and this Super Snap Pea Pasta with Crispy Prosciutto is all cooked in one pan and it couldn’t be easier. It starts with crisping up prosciutto and setting it aside, and then layering in the other ingredients.
Sugar Snap Peas are already starting to appear in markets and I thought I would get a jump on spring and create this Sugar Snap Pea Pasta with Crispy Prosciutto to entice the change of seasons with these fresh flavors. Snap peas add a sweetness that’s subtle and offers some crunch to the dish and when cooked with pappardelle noodles the textures become complimentary.
The sauce is created with whole milk ricotta cheese that’s added after the pasta is al Dente, for a rich and creamy sauce when combined with the chicken broth. This Sugar Snap Pea Pasta dish is quick and tasty and the crispy prosciutto sprinkled over top adds the right amount of saltiness for a delicious finish.
Ingredients
- 3 ounces sliced prosciutto, torn in pieces
- 1 shallot, sliced
- 1 1/2 cups sugar snap peas, trimmed and cut in half
- 8 ounces pappardelle pasta, dried
- 2 1/2 cups chicken broth
- 2/3 cup whole milk ricotta cheese
- 1 tablespoon fresh dill, minced
- neutral oil for cooking
Tips
- You can use salami instead of prosciutto
- Fettuccine can be used instead of pappardelle
- Don’t use part-skim ricotta, it’s too thin to create a good sauce
- you can use fresh parsley instead of dill, but it has less flavor
(Serves 2)
To Prepare:
- In a large skillet over medium heat, add 1 tablespoon oil. After 2 minutes, add prosciutto. Cook for 3 minutes, flip to crisp all sides.
- Remove prosciutto and set aside. Add shallot to pan and stir. Cook for 2 minutes, add sugar snap peas, stir.
- Cook peas for 2 minutes and place pappardelle on top. Add broth and after 2 minutes, when it begins to soften, stir pasta into broth. Continue to cook for 8 minutes.
- Add ricotta to center of pasta and stir to combine with broth to create sauce.
- Turn off heat and add crispy prosciutto and dill.
- Serve from pan on plates and top with additional dill, if desired. Enjoy!
Super Snap Pea Pasta with Crispy Prosciutto makes a great weeknight meal, but you can double or triple it and make it on the weekend for a small gathering or dinner party.
