Stone Fruit Cobbler – Recipe!

Before summer’s end make sure you take advantage of all the fresh peaches, plums, nectarines and apricots while you can.  This Stone Fruit Cobbler is one of the best ways to enhance your summer fruit experience, even if the fruit is slightly over or under ripe, it works beautifully in this dessert.

Peaches and plums pair nicely together in an old fashioned cobbler like this one and I created a simple brown butter batter to make it even more delicious.  Browning butter and letting it cool until it almost solidifies is an easy process that’s done in a skillet right on your stove top.  You can let it cool while you peel the peaches and slice the fruit — it doesn’t require much time at all.

The entire cobbler bakes up beautifully in a casserole dish in under an hour and this dessert is best served with a dollop of vanilla ice cream on top.  I think it’s the perfect way to say goodbye to summer and remember luscious stone fruit.

Ingredients

8 tablespoon salted butter

3 cups peaches, peeled and sliced (about 4)

2 cups plums, sliced (about 4)

1 1/2 cups granulated sugar, divided

1 cup all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/4 cup browned butter, cooled

1 cup whole milk

1 teaspoon vanilla extract

vanilla ice cream for serving, optional

To Prepare:

  1. Preheat oven to 375 degrees.  Place butter in a 13 x 9 inch baking dish and place in oven to melt.
  2. Add peaches and plums to a bowl with 1/2 cup sugar, toss.  Set aside.
  3. Add remaining 1 cup sugar, flour, baking powder and salt to a stand mixer and mix on low.
  4. Add browned butter, milk and vanilla.  Mix on low until just combined.
  5. When butter is completely melted remove from oven and pour batter over top.
  6. Add fruit to top of batter.  Do not stir.  Bake in oven for 50 minutes or until cobbler is lightly golden brown on top.
  7. Remove and let cool at least 1 hour before serving.  Spoon into bowls and top with vanilla ice cream, if desired.  Enjoy!
