Slow Cooker Garlic Honey Chicken Thighs Recipe

Ingredients

1 1/4 pound boneless skinless chicken thighs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/8 teaspoon cayenne pepper

1/2 cup honey

2 tablespoons soy sauce

1 tablespoon rice wine vinegar

5 cloves garlic, minced

2 teaspoons fresh ginger, minced (or 1 teaspoon ground ginger)

2 fresh limes, cut in half

avocado oil for cooking

coleslaw mix for serving, optional

To Prepare:

  1. Remove chicken from any packaging and pat dry with paper towels.
  2. In a small bowl, combine garlic powder, onion powder, smoked paprika, salt and cayenne.  Sprinkle rub all over chicken thighs.
  3. In a slow-cooker insert or large pan, add 1 tablespoon oil and place over medium-high heat.  After 3 minutes, add chicken thighs.
  4. Cook for 3 minutes and flip and cook other side for 3 minutes.  Place insert back into cooker or thighs into cooker.
  5. In a measuring cup, add soy sauce, rice wine vinegar, garlic, and ginger, whisk to combine.
  6. Pour sauce over chicken and place lid on top.  Cook for 2 1/2 hours on high or 5 on low heat.
  7. Place coleslaw on plates and squeeze with wedge of lime.  Top with chicken and sauce and serve with lime.  Enjoy!
