I lived in Pacific Palisades close to 20 years. We were the lucky ones because we sold and closed on our house on December 20, 2024. I don’t often share my personal life that doesn’t relate to cooking or baking, but today my heart is breaking for all the friends and neighbors that lost everything. We have evacuated several times in this small beach town due to the proximity to the foothills and the Santa Ana winds that frequent us, but I’m sure when my neighbors evacuated their homes this week, they never anticipated that they would never see them again the way they left them. The Palisades is a strong community and will come together to rebuild — there is no doubt, but it’s just hard to witness the devastation at this time.
This easy chicken recipe would be a great meal to serve for folks that want some comfort, whether you’re effected by the fires or not. It’s simple to make in a slow cooker with pantry ingredients, so double it up and share it with someone who needs a little love.
Ingredients
1 1/4 pound boneless skinless chicken thighs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 cup honey
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
5 cloves garlic, minced
2 teaspoons fresh ginger, minced (or 1 teaspoon ground ginger)
2 fresh limes, cut in half
avocado oil for cooking
coleslaw mix for serving, optional
(Serves 4)
To Prepare:
- Remove chicken from any packaging and pat dry with paper towels.
- In a small bowl, combine garlic powder, onion powder, smoked paprika, salt and cayenne. Sprinkle rub all over chicken thighs.
- In a slow-cooker insert or large pan, add 1 tablespoon oil and place over medium-high heat. After 3 minutes, add chicken thighs.
- Cook for 3 minutes and flip and cook other side for 3 minutes. Place insert back into cooker or thighs into cooker.
- In a measuring cup, add soy sauce, rice wine vinegar, garlic, and ginger, whisk to combine.
- Pour sauce over chicken and place lid on top. Cook for 2 1/2 hours on high or 5 on low heat.
- Place coleslaw on plates and squeeze with wedge of lime. Top with chicken and sauce and serve with lime. Enjoy!
