Ingredients
- 1 pound bone-in pork chop
- 1 shallot, peeled and sliced
- 2 cups mushrooms, sliced – crimini or button
- 2 cups broccolini, trimmed into 3-inch pieces
- 1 tablespoon butter
- 2 tablespoons Dijon mustard
- 1/2 cup heavy cream
- 1/3 cup good brandy
- salt and pepper
- 3 cups hot brown rice for serving, optional

- Use an iron skillet so the sear on the outside gets brown with an exceptional crust
- Heat your skillet on high for 3 minutes pri0r to cooking
- Remove the pork chop from the refrigerator 20 minutes before cooking
- Reduce heat to low after adding cream to the pan

To Prepare:
- Preheat oven to 400 degrees. Remove pork chop from packaging and pat dry with paper towels. Sprinkle both sides with salt and pepper.
- In a large iron skillet over high heat, add 1 tablespoon neutral oil after 2 minutes, add chop. Sear on first side for 3 minutes, flip and sear second side for 2 minutes, then place in oven for 8-12 minutes, depending upon thickness.
- Remove from oven and place on a cutting board to rest. Add shallot and mushrooms to pan juices and cook for 2 minutes. Add butter, stir, then add broccolini. Cook for 3 minutes.
- Make a well in center of pan and add Dijon mustard, heavy cream and brandy (be careful, pan could ignite with alcohol addition). Reduce heat to low and stir until combined with vegetables.
- Cover and steam for 4 minutes, then remove lid and turn off heat. Slice pork off bone and across the grain.
- Add rice to a bowl, then sliced pork. Top with vegetables and pour remaining sauce over top. Enjoy!
