Seedy Crackers – Recipe!

Crackers are often a food that is completely over processed and most of the time don’t taste all that great. However, with the push on gluten-free products there are a few store-bought crackers that have a nice crunch, but are still missing lack luster quality.  So with that in mind, I created these Seedy Crackers, which have tremendous crunch and texture – better than anything you can buy at your local grocery store.

Seedy Crackers are super simple to make and are basically loaded with seeds and a few oats.  The ingredients are easy enough to find and are a one-bowl baking experience.  After rolling the dough out between two pieces of parchment, you simply bake and cool.

I think these crackers are spectacular all on their own, but are also nice with a simple spread like my Chilled Artichoke Jalapeno Dip.  Seedy Crackers store nicely in a sealed container for many days, but you better make two batches, so you will have some leftover.

Ingredients

1 cup rolled oats

3/4 cup pepitas, or raw pumpkin seeds

1/3 cup sunflower seeds

1/3 cup sesame seeds

3 tablespoons chia seeds

3 tablespoons poppy seeds

1 1/2 teaspoon kosher salt

1 1/2 tablespoons vegetable oil

1 1/2 tablespoons maple syrup

1 teaspoon sea salt

(Serves 4)

To Prepare:
1. Preheat the oven to 375 degrees.  In a large bowl, combine oats, pepitas, sunflower seeds, sesame seeds, chia seeds, poppy seeds and kosher salt, stir to combine.  Add in the oil and maple syrup and stir. Let the seed mixture rest in the bowl for 15 minutes.  Pour out onto a parchment lined baking sheet and form into a disc.

2.  Place another sheet of parchment paper on top of the seed mixture.  Roll out about 1/4 inch thick and remove top piece of parchment.  Sprinkle the top with 1/2 teaspoon sea salt.  Bake in the oven for 15 minutes.  Place another piece of parchment on separate sheet pan and invert the cracker onto the new sheet pan.  Remove the top parchment and sprinkle the top with 1/2 teaspoon sea salt.  Bake again for 15 minutes, let cool to room temperature.

3.  Break the Seedy Crackers apart into pieces and either store in an airtight container, or serve immediately with your favorite dip or spread.  Enjoy!
