No-Bake Strawberry Angel Food Trifle – Recipe!

It’s summertime and the temperatures are hot hot hot, so like many of you, I try and keep my kitchen as cool as possible.  This No-Bake Strawberry Angel Food Trifle is the perfect dessert on a hot summer afternoon or evening because it’s quick, cool, and creamy with no baking involved.

Using a store-bought Angel Food Cake is the first step in this no-bake recipe.  Angel Food Cake is made up of mostly egg whites and a little flour, so it’s enjoyably spongy and it absorbs fruit juices and cream nicely.  I do have a recipe for Angel Food Cake if you are interested in baking your own from scratch and trust me — it is not difficult.

What makes this dessert so special, it that this summertime trifle is lighter than strawberry shortcake, but has all the same amazing flavors.  It wouldn’t be summer without enjoying a few pints of fresh strawberries, and what better way to utilize these red ripe beauties than in an easy-to-prepare dessert.

This trifle recipe is all about layering fresh strawberries, slices of cake and some freshly whipped vanilla cream.  I decided to add a chocolaty touch with a few dipped strawberries and a drizzle of chocolate around the top for an exquisite presentation and taste, but you can always leave the dipped strawberries off the top to keep things even more casual.

6 pints of sliced strawberries, leave 5 whole

1/3 cup sugar

juice of 1/2 lemon

2 angel food cakes, grocery store or homemade

2 cups heavy cream

1 teaspoon vanilla paste, or 2 teaspoons vanilla extract

1/2 cup bittersweet chocolate, chopped

To Prepare:

1. In a large bowl, add sliced strawberries, sugar and lemon juice.  Lightly mash half the berries, leaving the rest sliced.  Let mixture sit on counter to macerate (soak) for 20 minutes.

2.  In a stand mixer or large bowl, whisk together cream and vanilla paste, until soft peaks.  Cut Angel Food Cake into 1-inch slices and place 1/3 of cake into a 6-quart clear bowl.

3.  Spoon a third of berries and juices on top of cake layer and top with a third of whipped cream.

4.  Repeat layering two more times, ending with whipped cream on top.  Place chocolate into a microwave safe bowl and heat on high for 45 seconds.  Stir chocolate until smooth.  Dip remaining whole strawberries into chocolate and place in  center of trifle. Drizzle remaining chocolate over top and refrigerate until ready to serve, Enjoy!
