Goat Cheese and Sun-Dried Tomato Phyllo Bites – Recipe

Delight your taste buds with these easy-to-make Goat Cheese and Sun-Dried Tomato Phyllo Bites.  Perfect for parties or as a savory snack.

Phyllo dough is a Greek or Middle Eastern paper thin pastry that you can make yourself or purchase in the frozen section of most grocery stores.  The beauty of this dough is that it’s so thin that it  crisps up quickly in a hot oven and can be filled with delicious ingredients, like goat cheese and sun-dried tomatoes.  These bites begin as a roll-up or log, but after baking, they are sliced and served in three-inch pieces.

I used a caramelized onion goat cheese, but you can always use plain, chive or any other savory flavored goat cheese.  These little bites make a great appetizer to serve with wine or your favorite cocktail and are a cinch to put together at the last minute before a party or gathering.

Ingredients

1 box or 16 ounces Phyllo dough

4 tablespoon butter, melted

4 ounces goat cheese, any savory variety

3 ounces shredded Parmesan cheese, divided

1/4 teaspoon black pepper

3 ounces sun dried tomatoes in oil

cilantro for topping, optional

(Serves 6-8)

To Prepare:

  1. Preheat oven to 400 degrees.  Line sheet pan with parchment paper.
  2. Mix goat cheese, 2 ounces of Parmesan cheese and black pepper together with fork.
  3. Spread two sheets of Phyllo on sheet pan and brush with butter.
  4. At short end of Phyllo dough, dollop goat cheese mixture across bottom (see video).
  5. Top with a few sun dried tomatoes and roll up.  Repeat until all Phyllo or goat cheese is used.
  6. Brush logs with remaining butter and sprinkle with remaining cheese.  Bake for 18-20 minutes or until light golden brown.
  7. Remove from sheet pan and place on cutting board.  Slice into 3-inch pieces and place on serving platter.  Top with fresh cilantro and serve.  Enjoy!
