Easy Stove Top Barbacoa Tacos Recipe

Barbacoa Tacos are a tradition in Mexico where meat is slow roasted until fork tender, then shredded to either serve on top of rice or with fresh corn tortillas.  This recipe uses chuck roast which is classic, however many Barbacoa recipes call for goat or lamb.

I like the simplicity of preparing these Easy Stove Top Barbacoa Tacos because after searing the beef in a hot pan, it’s pretty much about layering ingredients to create a sauce that the meat simmers in for a few hours.  The slow cooking offers such tender beef that is truly fork tender.

I like to enjoy the Stove Top Barbacoa in toasted corn tortillas and then top them with shredded cabbage, fresh avocado, and some sour cream to curb the heat.  The Chipotle chilies offer just the right amount of spiciness for one delicious taco experience.

Ingredients

  • 1 1/2 pounds chuck roast
  • 1 yellow onion, sliced
  • 2 teaspoons salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup tomato puree
  • 2 Chipotle chilies
  • corn tortillas for serving
  • avocado oil for cooking

Toppings (optional)

  • shredded cabbage
  • avocados
  • fresh cilantro
  • sour cream

Tips

  • You can reduce cooking time by half using an electric pressure cooker
  • A slow-cooker would also work wonders placed on high for 4 hours for cooking time
  • Using goat or boneless leg of lamb would also add some fun to this taco experience

To Prepare:

  1. Place chuck roast on a cutting board and cut into large pieces.  Slice onion and set aside.
  2. In a large saucepan or Dutch oven, add 1 tablespoon oil and place over high heat.
  3. Add chuck roast and sear on all sides, about 7 minutes.  Add onion and stir.  Continue to cook for 3 minutes.
  4. Add salt, paprika, cumin and pepper, stir.  Add beef broth, tomato puree and Chipotle chilies, stir.
  5. Reduce heat to low and cover with lid.  Cook for 2-2 1/2 hours or until meat is fork tender.  Remove from heat.
  6. Shred meat with forks and layer on top of toasted corn tortillas.  Top with your favorite things.  Enjoy!

You can double the recipe, just add some additional cooking time so these Easy Stove Top Barbacoa Tacos are cooked to perfection.
