A quick and easy sandwich is always a delicious idea at mealtime and these Easy Cream Cheesy Pesto Grilled Cheese are made with ingredients that you probably already have on hand and are super convenient to pick up at your local grocer. The cream cheese is not only on the inside of the sandwich, but slathered on the outside, instead of butter for an amazing crispy crust.
The inside of these Pesto Grilled Cheese sandwiches are cream cheese, shredded cheese – I used Jack cheese, but white cheddar would work beautifully too – and pesto, either homemade or store bought.
The beauty of these Easy Cream Cheesy Pesto Grilled Cheeses are the creamy flavors, but also the simplicity of putting together something so deliciously easy in a short amount of time. They’re great for lunch or dinner and would be super tasty dunked in a tomato soup.
Ingredients
- 8 slices sourdough bread
- 4 ounces whipped cream cheese
- 2 ounces pesto sauce, either homemade or store-bought
- 2 cups shredded jack cheese
- 1 tablespoon butter

Tips
- You can substitute Jack Cheese or White Cheddar
- Whipped cream cheese is shreddable and melts easier
- Whole wheat bread or rye bread would be tasty as well
To Prepare:
- Spread slices of bread with cream cheese.
- Top with a thin layer of pesto sauce and top with shredded cheese.
- Place bread on top and slather outside with cream cheese.
- Add butter to a skillet and place over medium heat. After butter is melted, add sandwiches – cream cheese side down.
- Cover with lid and cook fro 3-5 minutes or until deep golden brown. Spread top of bread with remaining cream cheese and flip.
- Cook for 3 minutes and remove from pan. Slice and serve warm. Enjoy!
