Ingredients
- 1 sheet butter puff pastry, defrosted
- 1/4 cup heavy cream
- 2 cups shredded Gruyere cheese
- 3 ounces diced Pancetta
- 3 ounces fresh or frozen defrosted peas
- freshly cracked black pepper
Tips
- Try and use all-butter puff pastry
- You can substitute jack cheese for Gruyere
- Frozen peas work just as nicely as fresh, but it’s fun to use fresh during the springtime

To Prepare:
- Preheat oven to 375 degrees. Line sheet pan with parchment paper.
- Remove puff pastry dough from package and place on sheet pan.
- Score 1-inch around edges. Brush with heavy cream inside the scored area.
- Sprinkle 1 1/2 cups Gruyere cheese on top of dough.
- Top with Pancetta and peas. Sprinkle remaining cheese on top.
