Ingredients

  • 1 sheet butter puff pastry, defrosted
  • 1/4 cup heavy cream
  • 2 cups shredded Gruyere cheese
  • 3 ounces diced Pancetta
  • 3 ounces fresh or frozen defrosted peas
  • freshly cracked black pepper

  • Try and use all-butter puff pastry
  • You can substitute jack cheese for Gruyere
  • Frozen peas work just as nicely as fresh, but it’s fun to use fresh during the springtime

To Prepare:

  1. Preheat oven to 375 degrees.  Line sheet pan with parchment paper.
  2. Remove puff pastry dough from package and place on sheet pan.
  3. Score 1-inch around edges.  Brush with heavy cream inside the scored area.
  4. Sprinkle 1 1/2 cups Gruyere cheese on top of dough.
  5. Top with Pancetta and peas.  Sprinkle remaining cheese on top.
  6. Bake for 25 minutes until edges are golden and puffed.  Remove and top with black pepper.
  7. Slice and serve warm.  Enjoy!
